Fresh Strawberries and Chocolate Whipped Cream

My parents are in town this week and they took the kids to the Jungle Farm today. They had a great time and lucky for us they came home with a basket full of fresh strawberries…

I was looking for a quick summer dessert and decided to quickly make some chocolate whipped cream to serve along with some angel food cake. This is a simple and quick recipe, ready in less than 20 minutes. I used strawberries but this would be great with raspberries as well.

  • Fresh sliced strawberries
  • 1 tbsp sugar
  • 1 tbsp vanilla
Chocolate Whipped Cream
  • 1/2 cup powdered sugar
  • 1/4 cup cocoa
  • 1.5 cup heavy cream

  1. Slice strawberries and toss in a bowl with about 1 tablespoon of sugar and 1 tablespoon of vanilla (adjust to taste). Let sit for 15-20 minutes.
  2. Sift half a cup of powdered sugar with a quarter of a cup of cocoa. In a large mixing bowl, start whipping 1.5 cups of heavy cream. Add the sugar and cocoa gradually and continue mixing until the whipped cream reaches the consistency you desire (I prefer a slightly harder whipped cream for this, closer to a mousse).
  3. In a small bowl, place a few chunks of angel food cake, top with a spoonful or two of whipped cream and strawberries.
